I'm currently in the process of hiring a new copyeditor to make another pass at my business of acting manual - it's in it's third draft and been used to DIY'ing it and working through a proofreader/copyeditor that's local in order to keep the budget manageable.  I'm interested in 2 new copyeditors out of the city and they've asked that I send the manuscript to get a better estimate on the time and cost of giving it another pass. 

Do I ask that they sign a non-disclosure agreement before sending them the manuscript?  Do I send them the entire book, or a chunky chapter as an excerpt with a page count on the rest of the book?
